Lemon and Chia Seeds Muffin

“Lemon and Chia Seeds Muffin: One of my first sweet recipes when I started teaching children to cook at En Cuisine.”

Preparation time: 20 minutes

Cooking time: 20 minutes

 Ingredients (6 lemon and chia seeds muffins):

  • 100g of plain flour
  • 80g of coconut sugar
  • 80g of unsalted butter
  • ½ lemon + zest
  • 1 tablespoon of chia seeds
  • ½ tablespoon of baking powder
  • 2 eggs

Utensils:

  • A wooden spoon
  • Weighing scale
  •  2 large bowls

Step-by-step recipe:

  1. Melt the butter and let it cool down on the side.
  2. In a separate bowl, combine the eggs and the sugar until the mix is slightly white with bubbles on the top. Then, pour the flour into the mixture and stir.
  3. Squeeze the lemon and add the zest. Pour the melted butter in the mix.
  4. Add the chia seeds and the baking powder. Stir until you combine all the ingredients together.
  5. Pour the mixture into the muffin tray and put it in the oven at 220°C for 15 minutes.

Little chef tips:

You can swap the chia seeds with poppy seeds for a different flavour.

Now, it’s time to take to the skies with their DIY Balloon Fiesta. Experience the awe of hot air balloons at the Albuquerque International Balloon Fiesta as children try their hand at crafting their very own balloon masterpiece.

Finally, creativity will soar at their MassKara Festival workshop where your child can discover the art of creating colourful beaded masks and vibrant hats, all in celebration of resilience and festivity.

To cap off the week, The Strings Club Halloween Parade will see everyone marching proudly in their masks and decorations, ready to show off our spooky spirit!

Why Mathnasium?

For a child’s overall pattern of maths education, where does Mathnasium fit in? Schools are the primary education provider; Mathnasium is a supplemental education provider. The distinction is that the primary provider issues grades, whereas Mathnasium does not. We affect their grades in a positive way, and our role is to supplement what kids are learning in school.

As a supplemental education provider, Mathnasium is structured as a Learning Centre rather than a tutorial service. A tutor’s job is to help a student get through tonight’s homework and Friday’s test. Mathnasium does provide support in terms of homework and upcoming tests, however, our primary role as a learning centre is to delve into the reasons why tonight’s homework is such a huge issue.

Knowledge Gaps

Usually, the reasons are a series of knowledge gaps that students have incurred over the years. Nearly every student we assess has some gaps. They can be anywhere from six months to several years behind.

Long Term Success

As a Learning Centre, our role at Mathnasium is strategic: a long-term proposition. Our job is to ferret out those gaps and then supplement students’ education by filling in those gaps over time. This is why our assessment process is so important; it helps us pinpoint these gaps and provides us with a foundation on which we build the student’s program at Mathnasium.

It’s important to keep this long-term objective in mind. If we just worked on tonight’s homework, we might get through it and help them come up with the answers, but we wouldn’t be teaching these kids anything in the long run. There is a distinction between a tutoring service and our role as a Learning Centre. We are not here to parallel exactly what’s going on in school. We are here to supplement it.

“I spent most of my childhood in Biarritz, with this cake (Gateau de Savoie) stuffed in my mouth! I couldn’t get enough.”

Preparation time: 60 minutes

Resting time: 10 minutes

Cooking time: 15-20 minutes

Ingredients:                                                                                      

  • 75g sugar
  • 3 eggs
  • 50g flour
  • 20g cornflour
  • 2 drops vanilla extract
  • 60g sugar

Utensils:

  • 2 large bowls
  • 1 wooden spoon
  • 1 cake mould
  • Weighing scale
  • A whisk

Step-by-step recipe:

  1. In two large bowls, separate the egg whites and yolks.
  2. Whisk the egg yolk until you reach a smooth texture. Then, add the sugar and keep whisking.
  3. Whisk the egg whites until you get a stiff peak. Don’t forget to add a pinch of salt.
  4. Add the egg whites to the egg yolk by folding the white into the yolks. Do not mix and always fold in the same way.
  5. Add the vanilla, and the plain and corn flours into the mixture. Fold the flours into the egg mix.
  6. Pour the mix in a mould and cook it for 30-40 minutes in a preheated oven at 170C.

In the past we have had trips to the British Museum, the National Gallery, as well as the Natural History Museum and a cruise along the river Thames, to name a few! With many more planned for the duration of the academic year. Most national galleries and museums host several exhibitions a year, so there really is an abundance of choice and a lot for our students to experience.

What to expect

Sit back and experience delicious authentic Singaporean, Malaysian and Chinese food with a modern twist in the heart of London. Considered to be one of London’s best Asian restaurants, Bugis Street encompasses a relaxed ambiance with fabulous international cuisine. The staff are very friendly and can explain what’s on the menu. We had a selection of starters and sharing main courses. For starters we highly recommend the sesame prawn on toast and aromatic crispy duck. They also offer a sharing platter which combines the spring rolls, spare ribs, sesame prawn on toast and chicken satay. This is a great for a family to share. As for mains, we had some of the Bugis signature dishes such as the Singapore Laksa, its seriously the best in town! Nasi Goreng also a speciality from the region. For a lighter lunch or dinner, I would opt for the steamed filet sea bass which was deliciously light with ginger and spring onion. You can view the menu here.

In case you still have space for more, do try their desert options too of banana fritters and ice cream. The kids loved it!

How it All Started

We established Bright Education Group when we were both master’s students at Imperial College London. As immigrants newly arrived in London, we had to work long hours alongside our studies to make ends meet.

With a strong passion for teaching and prior tutoring experience in our home countries, we were eager to share our hard-earned knowledge with students who could benefit from it. Getting started was exceedingly challenging, taking several months to grasp the intricacies of connecting with students and their families and promoting our services. However, once we gained momentum, demand surged, primarily driven by referrals and word of mouth.

Eventually, we accumulated over three thousand hours between the two of us and found ourselves physically unable to cope with the demand. This realisation prompted us to extend our reach by hiring and training fellow university students and connecting them with families seeking tuition for their children. Thus, the Bright Education Group was born, and we have been assisting families and university students ever since.

Roasted Vegetable Tray

Roasted Vegetable Tray

“Roasted Vegetable Tray: A classic dish which will bring crunchiness and colour to any meal.”

Preparation time: 10 minutes

Cooking time: 1 hour

Ingredients for 4 servings:                                              

  • 1 butternut squash
  • 6 carrots
  • 2 onions
  • 250g Brussels sprouts
  • 4 potatoes
  • 2 heads of garlic
  • Fresh thyme and rosemary

Utensils:

  • Chopping board
  • 1 big knife
  • 1 peeler

Roasted Vegetable Tray

Step-by-step recipe:

  1.  Wash your vegetables and preheat your oven at 150C
  2. Boil some salted water and cook the Brussels sprouts for 15 minutes.
  3. Peel your butternut squash and chop it into big chunks. Do the same for the carrots, onions and potatoes. All the vegetables need to be the same size to cook evenly.
  4. In a tray, drizzle some olive oil and add all the vegetables. Toss with some salt, black pepper, rosemary and thyme.
  5. Put the tray in the oven for 40 minutes. Check if the vegetables are cooked before getting them out of the oven.

Little chef tips:

You can play with the flavours by adding some spices. Smoked paprika and turmeric deserve a go for this recipe.
