120 grams brown sugar
200 grams wholemeal flour
2 glass of milk or plant based milk
Zest of half a lemon
16 grams raising agents powder ( or mix baking powder plus bicarbonate of soda)
Raisins, walnuts optional
Cinnamon and honey as desired
Preheat the oven to 180 C
Line a 20 cm springclip cake tin with baking parchment or Mist the base and sides with oil.
Whisk the eggs with sugar. Add flour, raising powder, milk and zest of lemon.
Mix until well combined.
Add optional raisins or walnuts.
Add cinnamon as desired.
Toss the apples through the cake batter until evenly mixed and pour the mixture into the prepared tin.
Sprinkle with 2 tablespoons of sugar evenly over the top and bake the cake in the centre of the oven for 1 hour until it is well risen and golden on top.
Serve warm or cold
Don t forget to drizzle some honey on top!
