Crispy Fish Fingers

Today’s recipe by Tanja Ting who is a former international model, chef and goldsmith originally from Denmark and famous for gracing the pages of high-end publications such as Italian Vogue and Elle Magazine. She now lives in the San Rafael countryside of rural Ibiza with her husband and two children.  Which kids don’t like fish fingers, especially if they are homemade?

Ingredients – Serves 4
800g boneless white fish 
2 tbsp almond flour
2 tbsp millet flour
2 tbsp flaxseed flour
2 tbsp olive oil
Sea salt and fresh ground pepper
1 lemon cut in 4 
Preheat oven to 200 C.
First cut your fish into stripes. Then place them in a medium size bowl and add olive oil with salt and pepper. Turn them around and make sure all the pieces gets covered.
In another bowl mix the flours. Then take the fish and turn them one by one in the flour mix and place them in a oven tray covered with baking paper. Drizzle a bit of olive oil on top and bake them for 15 minutes.
Remember to squeeze some fresh lemon over your fish fingers.
