Asparagus, cherry tomatoes and pine nuts

Did you know? It’s Today marks the start of the Seasonal Veg campaign @vegpoweruk This means thinking a lot more about what is grown during this time of the year in British farms, and also supporting our local farmers and shops. Seasonal veg harvested are packed with wonderful nutrients – they are fresh and require much less carbon footprint too.

Asparagus, cherry tomatoes and pine nuts

You can find some delicious British grown asparagus at this time of the year, which are delicious cooked with tomatoes in a zingy flavour with a sprinkle of pine nuts. Asparagus are great sources of vitamin B1, C and folates. as well as fibre.


1 tbsp vegetable oil

1 clove garlic, chopped

200g asparagus spears

150g cherry tomatoes

30g pine nuts

1 tbsp soy sauce

1 tsp sesame oil


1. Heat the vegetable oil in a saucepan, then add the asparagus spears, cherry tomatoes and pine nuts, to cook for 5 minutes.
2. Coat with the sauce and sesame oil, and cook for a further 3 minutes. Serve as a side or main.
