Smoked Trout & Grapefruit Salad

Today’s recipe is from Mum of two Dyala Madani, who blogs at Umamimami sharing yummy family recipes. Get your kids helping you in the kitchen. This recipe is great for the Summer so refreshing and yummy!

Ingredients & Prep

A bed of Greens, whatever kind you like, wash and dry

2 Cups Green Beans – steam til tender, with a slight crunch.

3 Fillets Smoked Trout – remove skin and break into bite size pieces using your fingers.

3 Grapefruits – peel & then peel again to remove white skin. Chop into bite size pieces.

1 Cup Pine Nuts – roast until they start to turn brown.

Dressing

Juice of Half a Grapefruit

Juice of 1 Lemon

2 Tablespoons Olive Oil

Sea Salt, to taste
