Mexican Soup for the soul

A classic “sopita de fideo” (nooddle style soup) which is totally our kind of comfort food.

This fideo soup recipe is super quick, for those days that you are mega busy, but still want to cook a special and delicious soup. You can use frozen sweetcorn and peas, which speed everything.

Serves 4


2 cups of fideos or vermicelli

1/2 white onion chopped

1 garlic clove peeled

2 tbsp vegetable oil

750 ml chicken stock or 750 gr water plus an organic chicken stock cube

Pinch of salt

1/2 cup frozen sweetcorn

1/2 cup frozen peas

To garnish

Feta cheese

Lime wedges


Heat the oil in a large saucepan at medium heat.

Then add onion and fry for 3 min, the add the garlic clove and the fideos. Fry the fideos for 5 min stirring all the time, so they do not burn.

Add the chicken stock and turn the heat down. Add more salt if needed.

Then after 5 min, add the sweetcorn and peas. Cook for further 5 min or until the fideos are soft.

Serve with some crumbled feta and a squeeze of a lime wedge and if you want to add extra flavour, add a bit of your favourite spicy salsa.

Enjoy this delicious soups with some roll up homemade corn tortillas with a bit of mayo and slices of avocado! Delicious!
