Makes 6 cocktails
¼ cup water
½ cup honey
6 whole cloves
1 Cinnamon quill
3 cardamon pods, broken up with pestle or rolling pin
180ml gin
Soda water
Orange rind to garnish
Place water, honey and spices into a saucepan and heat over medium heat for approx. 5 minutes until the sugar has dissolved. Allow mix to completely cool before straining through a fine sieve and discarding spices.
Fill a tumbler half way with ice cubes, and pour in 20ml of the spiced syrup and 30ml of gin. Top with soda water and garnish with a piece of orange rind.
