Watermelon Coconut Ice Lollies

Today’s contributing recipe is by local Mum of one Carla who is also due very soon with her second baby. We just love her Instagram account @imadetoday.  She shares with us this refreshing recipe that I am sure all kids will love, just before the start of school.


All her recipes are refined sugar free. Made from wholefoods, mainly organic, plant based, wheat free, gluten free and dairy free.

Ingredients

Half a watermelon

Pinch vanilla

Lime zest

Tub of coconut yoghurt

1-2 Kiwi fruit

Bee pollen

Method

Blend half a watermelon in vitamix with pinch of vanilla powder and some lime zest to taste.

Pour into ice lolly moulds till about 3/4 full. Place in freezer.

Remove after 30min or when liquid is semi frozen. Add coconut yoghurt to remaining 1/4.

Swirl around at bit and slide in a slice of kiwi fruit.

Sprinkle bee pollen at the end and add ice lolly stick.

Freeze till solid. Enjoy!!
