Quick & healthy Mediterranean vegetables and hummus

Serves 1 | Prep time 5 minutes | cooking time 5 minutes

This is a fantastic recipe if you don’t have much time to cook but want something delicious and healthy.


1/4 medium aubergine cut into 2cm cubes
1/2 medium courgette, cut into slices and halved
Olive oil
5 cherry tomatoes, halved
2 teaspoons reduced fat hummus
One slice of whole grain or rye bread


Place courgette, aubergine and olive oil in a medium bowl and toss to coat evenly.
Heat a pan on the stove and add the aubergine and courgette. Cook until soft and coloured.

Spread the hummus on the slice of toast and top with the aubergine, courgette and cherry tomatoes. Season with salt and appear if desired.
